Can I make me ... "taller"?

The game that I'm working on right now is going to be first person, so I'm wondering if I might be able to make the "sight bar" a little higher, so I can seem more of a human size than a little monkey lol

Do you mean you want to make the point-of-view (or perspective) for the firstperson mode higher off of the ground?
