if I had to guess, it's a glitch with your GPU's drivers.

you never mentioned your GPU and the version of the drivers your running ("the newest" won't cut it )

you seem to be saying at the beginning that this occurs when there's a lot of geometry in view, does this happen in any other OpenGL games when your framerate is low, or when there's a lot of geometry on screen?

i discovered that on maps that are made with shaders on, you only see stripes at the colour of the background and here of the current skybox
look this is by maps that are made with shaders on:

I've noticed i've been seeing this a little in my map... rev1 look in Control Panel >System to find out what graphics card you have.

the newest version of OS X (10.6) supposedly has a lot of OpenGL regressions

you still haven't mentioned your graphics card
we also want to know which version of OS X you're running
